Zaney Girl Chicken Cordon Bleu

Here’s a great recipe that’s easy to make and even easier to take to pot lucks or a friend’s house.

Ingredients:
1- bag of breakfast potatoes
2 cups of cooked chicken
2 cups of diced ham
1 1/2 cups of shredded Swiss cheese
1 cup of Monterey Jack/Colby Cheese
1 – 26 ounce can of cream of mushroom soup
1- 16 oz can of Durkee French fried onions

To Prepare:
In a large bowl, mix soup, chicken, ham, potatoes and Swiss cheese.
Pour into casserole pan and top with Monterey Jack/ Colby Cheese.

To Cook:
Dish can be prepared ahead of time and frozen to be used when needed.
Remove from freezer, leave pan covered with foil, let it thaw and then place in oven at 350 for one hour.
With 5 minutes of cooking time left, remove foil, sprinkle can of Durkee onions on top and finish baking until onions are golden brown.

Visit Carpenter’s Market with me

So many people are amazed with our bacon, sausage and great meats.  They all come from Carpenter’s Market, located just up the street from Zane Trace Inn.  It’s fresh meat, reasonably priced, and cut to order.  I interviewed Eric Huston, the owner of Carpenter’s Market, a couple weeks ago.  You can watch the video on Zaney Girl TV! 

A couple years ago, some people from Wisconsin were visiting family in Somerset.  They brought a whole cooler of cheese with them to give to their family.  After eating our bacon and sausage, they placed a special order with Eric.  He packed their meat exactly the way they wanted it and froze it for them.  They left with TWO coolers of sausage and bacon!  Some guests have cleaned out the meat case with their special requests!  After one retreat, the ladies loaded up with their families’ requests for bacon and sausage and literally bought every ounce that Carpenter’s had in the store. 

During Chocoholics Weekend, we special order thick cut bacon for our chocolate covered bacon.  Eric orders a slab of bacon, about 7 – 8 pounds, and cuts it into 1 inch slices for us.  Then, he packs it according to our request.  We cube it, fry it, and dip it in melted chocolate.  Then we roll it in crushed almonds.  YUMMY!  We also get tavern ham from Carpenter’s and cook it slowly on low heat.  The secret is drenching it with a bottle of Frostop Rootbeer.  It is wonderful–tender, flavorful.
