Ken’s Cookin’ in the Craft Farm Kitchen

Author Zaney Girl Chicken Cordon Bleu–Ken’s recipe! Easy to make and great for carry in dinners. 1 bag southern style hash browns, 1 large can mushroom soup, 1 package diced ham, 1.5 cups shredded swiss cheese, 1 cup shredded colby jack cheese, diced chicken (1 cup per person), bake at 350 for 1 hour, top with french fried onions and broil until crispy. Served it Saturday at the Craft Farm for our scrapbook retreat guests with steamed asparagus and salad. YUMMY!

Zaney Girl Chicken Cordon Bleu
Here’s a great recipe that’s easy to make and even easier to take to pot lucks or a friend’s house.
Ingredients:
1- bag of breakfast potatoes
2 cups of cooked chicken
2 cups of diced ham
1 1/2 cups of shredded Swiss cheese
1 cup of Monterey Jack/Colby Cheese
1 – 26 ounce can of cream of mushroom soup
1- 16 oz can of Durkee French fried onions
To Prepare:
In a large bowl, mix soup, chicken, ham, potatoes and Swiss cheese.
Pour into casserole pan and top with Monterey Jack/ Colby Cheese.
To Cook:
Dish can be prepared ahead of time and frozen to be used when needed.
Remove from freezer, leave pan covered with foil, let it thaw and then place in oven at 350 for one hour.
With 5 minutes of cooking time left, remove foil, sprinkle can of Durkee onions on top and finish baking until onions are golden brown.
